Black mussels are sweet, tender, plump and juicy. The meat colour varies from apricot (female) to cream (male). Mussels are commonly available quick frozen in its whole or half shell to lock in its flavour. Mussels that are grown on ropes suspended above the seabed rarely contain grit or sand, which reduces preparation time and provides a more pleasant eating experience.
