The flat-bodied, pan-sized silver pomfret is easy to eat whole, a form that shows off its beautiful, silvery skin. The attractive, silvery skin is edible and does not require descaling. Pomfret meat is firm but finely flaked, with a sweet, mild flavour. The flesh is pearly white, with a moderate fat content, and becomes white when cooked.
